COFFEE CAKE
Cake mix
2.5 cups almond flour
1 cup confectioners monk fruit
1.5 tsp baking powder
4 eggs
1/2 cup unsweetened almond milk
4 tbsp melted salted butter
Mix the wet ingredients together, add to mixed dry ingredients
Cinnamon sugar crumble
1 cup almond flour
1 cup brown swerve or monk fruit
6 tbsp melted salted butter
1 tbsp cinnamon
pinch of nutmeg
mix all together and set aside
Glaze
2/3 cup confectioners monk fruit
2-3 tbsp unsweetened almond milk
Preheat oven to 350 degrees
line an 8x8 pan with parchment, spray with baking spray
pour 2/3 of batter into pan, then add 1/2 of crumble mixture (use fingers to crumble)
cover with remaining batter and top with other 1/2 of crumble
Bake for 40 minutes, first 20 minutes uncovered, second 20 with foil to prevent cinnamon from burning
Cool and glaze
